Pasta, cucumber, peas and beans with a creamy oregano and garlic dressing.
The pasta in this salad looks like tortellini but it’s actually hollow. It’s good and chewy, but I haven’t figured out the obsession here with egg pasta. Regular pasta would be just as nice in this salad and would help reduce the fat content and richness. The dressing is very creamy and garlicky with vegetal overtones. The veggies are crisp but overwhelmed but the very powerfully-flavored dressing. In fact, I needed something bland to accompany the salad (roast chicken breast) because it’s so strong. It’s surprisingly low in calories despite the mayo-based dressing. On the other hand, half of the calories do come from fat.
