“Couscous & roasted vegetables with a lemon dressing.”
This is definitely better than Tesco’s attempt at couscous. The vegetables are eggplant, zucchini, red pepper and onion, and though they don’t actually taste roasted they are cooked well. The one problem with it is that it’s just too darn sweet. It doesn’t taste so much lemony as lemonadey. It also has far too much fat, but at least it’s from healthy sunflower oil, which is low in saturated and high in polyunsaturated fat. I’d eat it again, but I wish they’d adjust the sugar and fat a bit.
