This salad tastes more “healthy” to me than delicious. It certainly has a lot of healthy stuff in it. I’m a bit surprised by the amount of fat, though. It all comes from the dressing, which contains “basil-infused sunflower oil.” They could’ve reduced the amount of oil and maybe added some fresh basil instead. The squash is soft and chunky but overpowered by the dressing which is very sharp. The lentils and wild rice are a bit too chewy and grainy, but the quinoa is nice. Quinoa is always nice.

I suppose you could just leave off the dressing, and put a little balsamic over it instead? That’s what I do, and it spices it up nicely!
